His & Her Pizza Night


Pizza used to be my weakness – I would crave it and when I drank alcohol I felt like I needed a lot of it. I had no self control when it came to pizza. Fast forward to 2017 – I don’t crave pizza as often, but when I do I use a gluten free crust and dairy free cheese or no cheese at all.

Last night my husband & I made our own personal pizzas. He made a traditional pizza with pizza sauce + pepperoni + sopressa +  sauteed mushrooms + mozzarella.

My pizza consisted of homemade avocado pesto (recipe below) + coppa + sauteed mushrooms + baby arugula.

We both used Simple Mills Pizza Dough as the crust – I used avocado oil instead of the grapeseed or vegetable oil they recommend and I just followed the directions on the box. This pizza dough has super clean ingredients: almond flour + arrowroot + flax meal + cauliflower + baking soda + organic oregano + cream of tartar + organic garlic. It’s super tasty and man approved!

His pizza looked so good! He enjoyed it even though the crust wasn’t a normal crust. So those of you who have a man whose a little picky with their pizza crust you may want to try this brand out. This was the first time using this brand of pizza dough and we’ll definitely use it again!

My pizza tasted super fresh – I really loved all of these flavors put together!

This box of pizza dough makes two 8″ pizzas. We both cut our pizza into fours and ate two pieces each. It’s definitely filling! You could use any toppings you’d like. The next time we make pizzas I’m going to try to make a homemade dairy free alfredo sauce to use as my base. We shall see how that goes!

Avocado Pesto 

Ingredients – makes about 1 1/2 cups:

  • one ripe avocado
  • juice of half a lemon
  • a handful of fresh basil leaves
  • 3/4 cup of pine nuts
  • 2 tablespoons of avocado oil
  • dash of pink sea salt


  1. Add all of the ingredients above to a blender or food processor.
  2. Blend to your desired consistency – I like my pesto a little chunky.
